In one of my last Citrix XenDesktop courses a student descript the issue that pinned documents (documents, which are i.e. pinned on Word in the Taskbar) are away, after a re-logon of a user:
We discussed some possible sources of this issue and here are some results:
The cause of this behaviour is neither to find in Roaming Profiles or Citrix Profile Management. You’ll find the reason in some GPO settings which are often used:
Clear history of recently opened documents on exit
This setting causes that documents are showed and pinnable while a user session is running.
The documents will be erased while logoff.
This behavior can be manipulated with Citrix Profile Management if you wish.
Do not keep history of recently opened documents
This sessing causes that documents aren’t showed while a user session. So you also cannot pin this document to an application.
This behavior cannot be manipulated with Citrix Profile Management.

Solution approach with Citrix Profile Management (CPM)
You can add documents in your profile with CPM after they are opened once. So this pinned documents are still visible after a user logoff and re-logon again.
For this you can exclude following path in CPM and mirror it to your profile share while the session is running:
!ctx_roamingappdata!\Microsoft\Windows\Recent\AutomaticDestinations
After this setting the pinned documents are still visible after a re-logon:
